In the buffet restaurants in the hotels, it's usually very casual, and jeans can be worn. The actual restaurants that you sign up for at the beginning of the trip (Italian, Seafood etc.) tend to be a bit more fancy. I would suggest bringing a pair of khakis, loose button up shirt and nice sandals. These will take you almost anywhere. Most places I've seen say "no shorts" or "long pants" It doesn't say "no jeans" though. I'd say take one or two pair of long pants that are not jeans just in case.
Most restaurants just say "no shorts", I would say it is safe to do so.
